The Happy Tummy Bowl Recipe
My 'Happy Tummy Bowl' is such an easy and nutritious bowl of warmth, it's one of my favorite quick meals in the winter. It can easily be made vegan but substituting the chicken with jackfruit or tofu. For those who have never heard of jackfruit, google it. Weirdest fruit I've ever seen.
I named this the 'Happy Tummy Bowl' because that's exactly how it makes me feel. It's filling but not too filling, gives me energy, and makes my gut feel great! Let me know how you like it if you cook one up yourself.
1/2 sweet potato
1/2 cup cooked quinoa
2 cups arugula
1 cooked chicken breast
1 tbsp balsamic vinegar
1 tbsp olive oil
If the sweet potato isn't cooked, poke a few holes in the skin with a fork and throw it in the microwave for 5 minutes. Feel free to heat up the rice and chicken in the microwave as well.
Meanwhile, add the arugula to a bowl and pour over the oil and vinegar. Slice up the avocado and add it to the bowl. Once the sweet potato is cooked, remove the skin (it should peel off easily, careful not to burn your hands) dice it up, and throw it in the bowl with the chicken and quinoa.
