Vegan Aquafaba Brownies Recipe

You guys... these brownies. are. AMAZING!

I'm honestly having a hard time pretending they aren't sitting in my fridge right now waiting for me to eat them.  They are so gooey and fudgey and chocolatey, and what's the secret?  Garbanzo bean liquid! AKA aquafaba... this liquid is so hot in the vegan community right now as it's able to be whipped up into meringues, angel food cake, and all kinds of foods that had yet to find their vegan alternatives. All from the liquid you would normally discard from your bean can.

What a time to be alive.

I also added a packet of Chocolate Aloha Protein Powder to give them some added nutrition, and also to have an excuse to eat them in the morning.

Ok now onto the recipe!!!

Ingredients:

  • 1/4 c coconut oil
  • 1/4 cup vegan chocolate chips
  • 1/2 c brown sugar
  • 1/4 cup agave nectar
  • 1/2 c liquid from garbanzo bean can
  • 1 tsp vanilla extract
  • 1/2 c flour
  • 1/4 c cocoa powder
  • 1 packet (37g) Chocolate Aloha Protein Powder

Grease an 8x8 pan with coconut oil and set aside.

Preheat oven to 350 degrees.

Mix coconut oil and chocolate chips in a medium size bowl and heat until ingredients are melted together. Add brown sugar, agave nectar, garbanzo bean liquid, and vanilla extract and mix until smooth.

In a separate bowl mix the flour, cocoa powder, and protein powder.  Add the bowl of liquid ingredients to the bowl of dry ingredients and stir until smooth. (CAUTION: The batter will taste weird because of the garbanzo bean liquid, but this taste goes away when the batter bakes.  It's magical).

Pour the batter into your greased pan.  At this point you can have some fun and add toppings.  I added some pitted medjool dates and some more chocolate chips. 

Place the pan in the oven and bake for 25-30 minutes. Make sure to check that your brownies are cooked all the way through by inserting a toothpick into the middle. If the toothpick comes back covered in batter, bake for another couple minutes and check again.

Vegan brownies from heaven.

Let them cool before you cut! The temptation is real but wait at least an hour if you can.
