Coconut Almond Protein Bar Recipe

If you can't tell, I am ALL about making my own protein bars. They are so overpriced in stores and filled with preservatives and other chemicals that I'm just not interested in putting into my body. Don't get me wrong, I'll treat myself to a square bar every once in a while, but on the daily my wallet and stomach are not down.

It's also just so fun and easy to make your own. Yesterday I made these and it only took about 30 minutes.  So give these a try if you've ever thought about making your own protein bars, it's so easy and so worth it!

Ingredients

  • 3 scoops vanilla protein (I used SunWarrior)
  • 1/2 cup almonds
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp agave nectar
  • 3/4 cup coconut almond milk
  • Extra shredded coconut for sprinkling on top

Blend the protein powder, almonds, and coconut in a blender until you've reached a mealy consistency. Add to a medium sized bowl along with the agave and coconut almond milk, and stir until your arm hurts. It should turn into a very dense dough. Spread this dough out into a square using a small baking sheet lined with parchment paper. Put this in the fridge to rest for 20 minutes.  Pull out the tray and slice the square into your desired serving size (I cut it into 8 pieces).

Sprinkle with some extra shredded coconut and enjoy!
